Sia
Sia, short for “Asia,” is a veritable culinary Southeast Asian melting pot, preparing Chinese, Japanese, Thai, Vietnamese, Malaysian, and Indian dishes in its multiple open kitchens. Conveniently situated close to Náměstí republiky, the large, labyrinthine restaurant, which seats over 200 guests, opened its doors in December 2017 and quickly became the favorite of adventurous foodies as well as those looking for a unique dining experience. Its interior is a wonder of modern, minimalist industrial architecture, as unique to Prague as the menu itself. There are kitchens on all three of its floors and practically no walls, so we recommend that you look up when you enter to see the chefs cooking in the kitchen right in front and above you, as well as the Chinese dragon hanging from the ceiling. The waiters bring the food to your table as soon as it’s done and place it in the middle of the table to be shared just like in Asia. The menu’s standout and the pride of Sia’s head chef Jiří Štift is their mouth-watering traditional crispy Peking Duck. He prepares it with a modern twist: it’s brought to you in two courses and comes with thin, light, sesame flour pancakes, hoisin sauce, slices of fresh cantaloupe, along with assorted vegetables. The dough for the noodles and dim sum dumplings is made fresh everyday as well as the Peking Duck, which takes two days to prepare from start to finish. The Japanese robata grills on the ground floor prepare steaks and fish to perfection, and can also handle a fragrant and authentic tasting lamb tandoori. The wok kitchen on the top floor prepares properly spicy Chicken Kung Pao, different types of curries, noodle dishes, and soups. The steam kitchen on the middle floor prepares a large selection of dumplings – Shaomai, Crystal, Har Gow, Xiaolongbao, and Wonton. Try one of Sia’s signature dishes, like the Grilled Cod, Sirloin Steak, or order its tasting menu. With a full bar, you can round out your flavorful and spicy meal with some of Sia’s signature cocktails or delicious, fresh fruit lemonades, tea, or Vietnamese coffee.
